Wakame and Arugula Salad
Wakame is delicious re-hydrated and so easy to use! We soak ours in lukewarm water for 10 minutes. It's edible as is, but it gets even softer if you toss it in boiling water for a few seconds and rinse immediately in ice water. Plus, wakame turns a bright, beautiful green after blanching!
Here's a simple salad to make with your wakame:
Wakame and Arugula Salad for One:
- 3-4 pieces re-hydrated wakame, prepared with a dash of rice vinegar, soy sauce, and lemon
- 1/2 of an avocado
- 1/4 cup walnuts
- Baby arugula
- 2 T. Extra Virgin Olive Oil
- Salt, to taste
- Pepper, to taste
Chop re-hydrated wakame into pieces, either long strips or squares. Place arugula, avocado, and walnuts on a plate. Top with wakame and season with olive oil, salt, and pepper. Enjoy!
