ENERGY PACKED SEED & SEAWEED SNACKS
These snacks are part cracker, part granola, and seriously irresistible. We brought them to a party this weekend and they were gone so fast. We keep the extra crumbles in a bag for small snacking, while the bigger pieces make great bars.
HIGH ENERGY SEED & SEAWEED SNACKS
Serving size: 1/2 baking sheet
- 1/8 cup ground wakame
- 1/8 cup ground nori
- 1/4 cup ground flax seeds
- 1/4 cup unsalted sunflower seeds
- 1/4 cup unsalted pumpkin seeds
- 1/4 cup sliced almonds
- 1/4 cup sesame seeds
- 1/4 cup maple syrup
- 1 tablespoon toasted sesame seed oil
*If you have whole leaf wakame or nori sheets, create ground wakame and nori by pulsing in the food processor for a 10-20 seconds.*
Prehead oven to 300 degrees. Line a baking sheet with parchment paper. In a bowl, mix together the wakame, nori, and all of the seeds. Add the maple syrup and sesame oil to the seed mixture. Mix until all of the seeds are coated and the mixture sticks to your fingers. With olive oil on your fingers, press the seed mixture onto the parchment paper-lined baking sheet until it is 1/4 inch thick.
Bake for 30 minutes. Remove from the oven and cool completely. Once cool, break into crackers and enjoy!
